Ah, the great muffins of our times. Chocolate chip, blueberry, apple zucchini. OK, well the last one isn’t exactly well known, but that doesn’t make it any less delicious!  Plus, it’s low in sugar and high in protein and fiber. And at only 97 calories a serving, it makes for a healthy snack for kids and adults alike.

What you’ll need: (makes 48 mini muffins)

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour 
  • 1 cup quick oats 
  • 3 tablespoons ground flax seed 
  • 2 teaspoons baking soda 
  • 2 teaspoons cinnamon 
  • ¼ teaspoon nutmeg 
  • ¼ teaspoon ginger 
  • ¼ teaspoon allspice 
  • ½ teaspoon salt 
  • 2 cups zucchini, grated 
  • 2 medium apples, peeled, cored and grated 
  • 3 eggs 
  • 3 teaspoons vanilla extract 
  • ¾ cup unsweetened apple sauce 
  • ¼ cup canola oil 


  1. Preheat oven to 350 degrees. Coat mini muffin pan with canola oil spray.
  2. Combine all dry ingredients; set aside.
  3. In a separate bowl, combine eggs, vanilla, apple sauce and oil. Stir in grated zucchini and apple.
  4. Fold in dry ingredients until just combined.
  5. Spoon into coated mini muffin pan and bake for 10 to 15 minutes. (Muffins should spring back when lightly tapped.)
