Looking for a mouthwatering dessert that’s sweet, delicious and packed with fiber and protein? Enter: Pear Berry Crisp! This crowd pleaser is filled with refreshing pears and blueberries, and topped with hazelnuts, oats and honey. Kick it up a notch by garnishing with low-fat vanilla Greek yogurt.

What you’ll need: (makes 6 servings)

Topping

  • 1½ cups rolled oats
  • ¼ cup whole wheat flour
  • ⅛ teaspoon salt
  • ¼ cup honey
  • ¼ cup margarine or butter, melted
  • ¼ cup hazelnuts, chopped (or any nut)

Filling

  • 3 ripe pears, cored and cut into ½ inch slices
  • 2 cups blueberries (fresh or frozen)
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground clove
  • ¼ teaspoon salt
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract

Garnish (optional)

  • ¼ cup low fat vanilla Greek yogurt

Preparation:

  1. Preheat oven to 350 degrees.
  2. Make topping by combining the oats, flour and salt in a medium bowl. In a separate bowl, combine the honey and margarine, then add it to the oat mixture and toss gently.  Mix in the nuts and set aside.
  3. Make filling by combining the pears, berries, cornstarch, cinnamon, cloves and salt in a medium bowl. In a separate bowl, combine the honey and vanilla extract, then add it to the fruit mixture and toss gently.
  4. Pour the filling into an 8x8 baking dish, and spread the topping over it.
  5. Bake for 30 to 40 minutes until bubbly and crisp.
  6. Top with yogurt and enjoy!
